Paleo Muffins

Ingredients

  • 3 bananas
  • 3 eggs
  • 1 cup dates
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1/4 cup coconut oil
  • 2 cups almond meal
  • 1 tbsp cinnamon
  • 2 tsp baking soda
  • pinch of sea salt
  • 1 ½ cup shredded carrots
  • 1 cup walnuts
  • 1/2 cup pumpkin seeds
  • 1 tbsp ground flax seeds

Directions

  1. Blend: bananas, eggs, dates, apple cider vinegar, vanilla extract, coconut oil
  2. Mix Separately: almond meal, cinnamon, baking soda, pinch of sea salt
  3. Combine all of the above ingredients
  4. Add: shredded carrots, walnuts, pumpkin seeds, ground flax seeds
  5. Add to muffin pan and bake at 350F for 25 mins
