Paleo Muffins
Ingredients
- 3 bananas
- 3 eggs
- 1 cup dates
- 1 tsp apple cider vinegar
- 1 tsp vanilla extract
- 1/4 cup coconut oil
- 2 cups almond meal
- 1 tbsp cinnamon
- 2 tsp baking soda
- pinch of sea salt
- 1 ½ cup shredded carrots
- 1 cup walnuts
- 1/2 cup pumpkin seeds
- 1 tbsp ground flax seeds
Directions
- Blend: bananas, eggs, dates, apple cider vinegar, vanilla extract, coconut oil
- Mix Separately: almond meal, cinnamon, baking soda, pinch of sea salt
- Combine all of the above ingredients
- Add: shredded carrots, walnuts, pumpkin seeds, ground flax seeds
- Add to muffin pan and bake at 350F for 25 mins
