Vegan Red Curry Bowl

Ingredients

  • 1 sweet potato
  • 1-2 cups of cooked quinoa
  • 1 yellow onion
  • 1-2 minced cloves of garlic
  • 1-2 cups chopped broccoli
  • 1-2 cups chopped cauliflower
  • 1-2 cups chopped bok choy
  • any other veggies you like (celery, zucchini, carrots, etc)
  • 1/2-1 cup full fat coconut milk
  • 1-2 cups chickpeas
  • 1 tsp grated ginger
  • black pepper
  • 1-2 tsp red curry paste

Directions

  1. Chop & roast sweet potato
  2. Prepare 1-2 cups of cooked quinoa
  3. Saute (in coconut oil) yellow onion, minced cloves of garlic, chopped broccoli, chopped cauliflower, chopped bok choy, and any other veggies you like (celery, zucchini, carrots, etc)
  4. Combine all ingredients in a pot with full fat coconut milk, chickpeas, grated ginger, black pepper, and red curry paste
