Oat & Coconut Cookies
- 1.5 cups gluten free rolled oats
- 1 cup gluten free AP flour
- 1 cup dried coconut (option to toast)
- 1 tsp cinnamon
- 1 tsp baking soda
- 1/4 tsp sea salt
- 1/2 cup coconut sugar
- 1/2 cup coconut oil
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- 2 tbsp vegan milk
- option to add vegan chocolate chips (1/4 cup or a few per cookie)
- Combine wet ingredients & coconut sugar.
- Combine dry ingredients separately and then add it to the wet mixture. Option to pulse seeds in a food processor or blender a few times first.
- add in the chocolate chips or press a few into each cookie once they are on the sheet
- Once well combined place 1-2 inch cookies on baking sheet.
- Bake at 350F for 15 minutes.
