Oat & Coconut Cookies

Ingredients

  • 1.5 cups gluten free rolled oats
  • 1 cup gluten free AP flour
  • 1 cup dried coconut (option to toast)
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup coconut sugar
  • 1/2 cup coconut oil
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp vegan milk
  • option to add vegan chocolate chips (1/4 cup or a few per cookie)

Directions

  1. Combine wet ingredients & coconut sugar.
  2. Combine dry ingredients separately and then add it to the wet mixture. Option to pulse seeds in a food processor or blender a few times first.
  3. add in the chocolate chips or press a few into each cookie once they are on the sheet
  4. Once well combined place 1-2 inch cookies on baking sheet.
  5. Bake at 350F for 15 minutes.
