Lentil Butternut Squash Curry

Ingredients

  • 1 onion, diced
  • 2 cups red lentils
  • 2 cups butternut squash, diced
  • 1 14-ounce coconut milk (full fat)
  • 1 15-ounce can diced tomatoes
  • 1 tsp curry powder
  • 1 tsp Garam Masala
  • 1 tsp cumin

Directions

  1. Add all ingredients to a slow cooker
  2. Add 8 cups of water to the slow cooker before cooking.
  3. Just before serving, add an additional teaspoon of both curry powder and Garam Masala (if desired), stirring to combine
  4. Cook time: 6-8 hours on low
