Broccoli & Cauliflower Soup
Ingredients
- 4 tbsp coconut oil
- 4 cups of chopped leeks
- 6 minced garlic cloves
- 5 cups of vegetable stock
- 4 cups chopped broccoli
- 3 cups of cauliflower
- 2 tsp Dijon mustard
- 1 cup of almond milk
- ground pepper to taste
Directions
- Sautee coconut oil,chopped leeks, and minced garlic cloves until softened.
- Add vegetable stock, broccoli, cauliflower, Dijon mustard, almond milk, and ground pepper.
- Bring to a boil and then puree
