Broccoli & Cauliflower Soup

Ingredients

  • 4 tbsp coconut oil
  • 4 cups of chopped leeks
  • 6 minced garlic cloves
  • 5 cups of vegetable stock
  • 4 cups chopped broccoli
  • 3 cups of cauliflower
  • 2 tsp Dijon mustard
  • 1 cup of almond milk
  • ground pepper to taste

Directions

  1. Sautee coconut oil,chopped leeks, and minced garlic cloves until softened.
  2. Add vegetable stock, broccoli, cauliflower, Dijon mustard, almond milk, and ground pepper.
  3. Bring to a boil and then puree
