Butternut Squash Soup


  • 2 chopped yellow onions
  • 4 chopped garlic cloves
  • coconut oil for sautéing
  • black pepper to taste
  • 1 tsp dried rosemary
  • 1 litre of organic low-sodium Vegetable broth
  • 2 chopped & peeled apples (granny smith, empire, or gala are nice)
  • 1 peeled and cubed Butternut squash (can purchase it already prepped)


  1. Sautee onions and garlic cloves in coconut oil until soft
  2. Add black pepper and dried rosemary
  3. Add vegetable broth
  4. Add chopped & peeled apples
  5. Add peeled and cubed Butternut squash
  6. Simmer for about 20 mins (until squash can be pierced easily with the tip of a knife)
  7. Blend and serve
