Roasted Sweet Potato Salad

Ingredients

  • 3-4 sweet potatoes
  • 2 beets (optional)
  • coconut oil (melt on the stove first to liquefy)
  • sea salt and black pepper
  • 1/3 cup lime juice
  • 2 tbsp maple syrup or agave
  • 1 tbsp olive oil
  • 3 stalks chopped celery
  • 1/2 cup chopped walnuts or pecans
  • 1/4 cup chopped parsley or cilantro
  • 1/2 cup chopped green onion

Directions

  1. Peel and cube sweet potatoes and beets
  2. Toss in coconut oil (melt on the stove first to liquefy)
  3. Season with a little sea salt and black pepper
  4. Bake at 400F for 25-30 mins until tender when pierced
  5. Combine lime juice, maple syrup or agave and olive oil
  6. Toss potatoes and beets in above mixture and add celery, walnuts or pecans, parsley or cilantro, and green onion
