Massaged Kale Salad
Ingredients
- 1 tbsp olive oil
- 2 tbsp lemon juice
- 1/2 an avocado
- 1 tsp minced garlic
- black pepper to taste (and sea salt – optional)
- 4 cups of chopped kale
- top with desired amount of hemp hearts/seeds, roasted chickpeas, sesame/pumpkin seeds, etc.
Directions
- Combine olive oil + lemon juice + avocado + minced garlic + black pepper (and sea salt – optional)
- Pour over chopped kale and massage leaves with dressing to soften.
- Top with hemp hearts/seeds, roasted chickpeas, sesame/pumpkin seeds, etc.
