Massaged Kale Salad

Ingredients

  • 1 tbsp olive oil
  • 2 tbsp lemon juice
  • 1/2 an avocado
  • 1 tsp minced garlic
  • black pepper to taste (and sea salt – optional)
  • 4 cups of chopped kale
  • top with desired amount of hemp hearts/seeds, roasted chickpeas, sesame/pumpkin seeds, etc.

Directions

  1. Combine olive oil + lemon juice + avocado + minced garlic + black pepper (and sea salt – optional)
  2. Pour over chopped kale and massage leaves with dressing to soften.
  3. Top with hemp hearts/seeds, roasted chickpeas, sesame/pumpkin seeds, etc.
